Black Bread "Steakhouse" Style
This is a fairly dense and flavourful bread really substantial and filling. Enjoy!
1 1/4 cups strong brewed coffee, room temperature
1/4 cup vegetable oil
1/4 cup dark molasses
2 tablespoons brown sugar
1 cup whole wheat flour
1 cup rye flour
2 cups bread flour
2 tablespoons unsweetened cocoa powder
1 1/2 teaspoons salt
2 1/2 teaspoons active dry yeast
1 egg
Dusting of Oatmeal
Directions
Take Mixing Bowl and pour in your warm coffee, add to that your Yeast and Molasses and Brown Sugar, Coco powder, salt and the oil. Give it a good stir and allow to stand for about 5 minutes, this will then while froth up pretty quickly.
Now add your various flours half a cup at a time mixing in until you are left with the last cup of bread flour and now is the time to get your loins girded and start kneading as you add the last cup.
You can of course use a mixer and dough hook but bread kneading is or can be highly therapeutic and it gives you a good upper body workout as well.
Once the dough is smooth and pliable sort of elastic stop adding flour and place in a warm area in either in a large 9 x 5 inch lightly greased Loaf tin, or for rolls divide into 10 to 12 equal pieces and roll into balls and place on a lightly greased baking tray and allow the dough to rise to twice its size which will happen quite quickly and more quickly in warm places.
Brush with the beaten egg and dust with Oatmeal.
Now place into the centre of a pre heated oven at 375F which is about 190C
Rolls will need to be Baked for about 20 minutes while a loaf will take around 35 minutes.
Tip for testing the readiness of bread.
tap the bottom of the tin and if you get a nice hollow sound it is cooked.
