Macadamia and Berry Dreams
Ingredients
3 cups all-purpose flour
3/4 cup white sugar
1 cup packed light brown sugar
1 cup softened butter or margarine
2 medium eggs
1 cup vanilla baking chips
1 cup chopped macadamia nuts
1 cup dried cranberries or blueberries or sultanas or even a mixture of all three
1 tablespoon vanilla extract
3/4 teaspoon baking soda
3/4 teaspoon salt
How 2
Preheat oven to 350 degrees F (175 degrees C).
Cream together white sugar, light brown sugar and butter. Add slightly beaten eggs and vanilla extract.
Add flour, baking soda, salt into the creamed mixture until evenly but not over mixed. Stir in vanilla chips, macadamia nuts and dried fruit.
Drop from a well rounded teaspoon or small scoop onto an ungreased baking tray, leaving the usual spreading space. (These should not spread too flat) Bake for 12 minutes or until just set. Remove from oven and let cool. Cookies will sink slightly but the flavour stays in!
If you like chocolate cookies then remove half a cup of flour and replace with cocoa
Melted chocolate drizzled onto the cookies makes a nice addition as well.
