Madeleines Empty Madeleines

Ingredients

Firstly this will need more than a baking tray as you will need shaped trays for these. The classic is the elongated shell but you can use star shapes and in fact just about any shape you want, just do not make them to deep or steep!

2 medium eggs
1/2 teaspoon vanilla extract
1/2 teaspoon lemon zest
1 cup confectioners' sugar
1 cup all-purpose flour
1/4 teaspoon baking powder
1/2 cup butter, melted and cooled

Preheat oven to 375 degrees F (190 degrees C).
Grease and flour about twenty-four medium Madeleine molds.
First beat eggs the eggs in a bowl with the vanilla and lemon zest with an electric mixer on high speed for about 5 minutes. Gradually incorporate the confectioners' sugar. Beat for a further 5 to 6 minutes or until thick and silky.
Sift together the flour and baking powder. Gently fold the flour into the egg mixture a little at a time. Then fold in the melted and cooled butter.
Spoon batter into the prepared molds to around 3/4 full.
Bake for 10 to 12 minutes or until the edges are golden and the top springs back.
Cool in the molds on the rack for a minute or so and then loosen the cookies with a knife, tip the cookies out and cool on the rack.

Now you have a few options...... melt semi-sweet chocolate chips and dip the tips in the chocolate and then lightly dust with confectioners sugar.
Dust lightly with cinnamon and sugar mix
or just dust with Confectioners sugar
alternatively dust with whatever you fancy will taste good or dip in anything that will solidify and not make too much mess
Cookies must be kept in an airtight container if they have not already been eaten by the kids.
