Pancakes By Daniel 6 and Mathew 9
Firstly Daniel is no Delia Smith, so if you are after precise measurements then you are at the wrong recipe page.
Anyway usage was approximately
4-5 oz APF (Use more flour for thicker pancakes)
2 Eggs
1/2 Pint of milk
1/4 Pint of water

First wash hands, come to table and then Dad says Go and wash your hands this time with some water and maybe a little soap, I mean what is wrong with jusy wiping them on a damp towel?
Make sure that your Mum or Dad have prepared all of the stuff you need. White powder stuff, eggs, milk and H2O ( means water! Learnt that at school.)
So put the white stuff into a bowl, ours was already sieved or something so I did not need to do that. You might want to seive it though as you never know what stuff you can find in the white powder?
Now I like breaking eggs, they really break easy when you drop or throw them but to open them up with precision is another story. Grip firmly and whack with fork or other hard object. Part the shell and let all the insides become outsides as they run into the glass, try not to get the shell in the egg as that would be outsides inside the insides and well just dont OK. Put the egg into the flour, repeat process with the other egg: it is not easy you know, no two eggs are the same and the second egg just wanted to give me grief.......... and it did.
Anyway pour what is left of the egg into the flour with the other egg. Do a bit of mixing
Now add a drop of milk and mix and then some more milk and mix and so on until all of the milk is in the gloopy mixture. Add the water as well and mix it all up until it is the consistency of Bath water. Dad just told me only my bath water maneges to get that thick? OK the consistency of a runny Yoghurt or thin cream. Now cover and leave to settle. Great so while it settled we watched some TV for a while. I say we because I was the prep man and Mathew was going to be the cook man!

After about an hour I was getting hungry and asked dad if we could start cooking and he agreed and collected a fire extinguisher, fire blanket and the garden hose? HaHaHa. Anyway not be put off after all I was hungry I heated the frying pan and added a dop of vegetable oil. Once that was nice and hot I lifted the pan to the mixture and used a ladle to tip the mixture into the pan. It fizzes and you have to move the pan tilting it to get an even cover. Put the pan back on the heat! After a very long time (About 30 seconds Dad said) I then checked the edges of the Pancake with a Palette knife and then shook the pan so the pancake would be loose. Now not being anything like Delia Smith I shook the Pancake to the front of the pan and let it overhang, a swift flick of the wrist and yihaa the pancake flipped and landed to cook the other side. By the way before you start cooking remember to give the mixture a quick but gentle mix.
Dunno why people like Delia have to use fish slices to turn pancakes over, if they were meant for pancakes they would have been called pancake slices??? Anyway after a short while flip the pancake again and check that it is cooked and lightly golden brown on both sides. Move over to a table guest and slide the Pancake onto their plate with the words, "How many more do you want?"
We serve them with all sorts of stuff! Today we had them with Honey.
You can use just about any savoury filling, I like them with my Mums Tuna Tapenade you know the Jarvis Gourmet one or the Saluyot cheese spread that one is scrummy.
Then after the savoury ones change to sweet ones, Jams are great, Mango or Mango Pappaya are my favourites, you can have pancakes with Caster sugar and lemon which is the classic English style or like we did today with honey.

Crack egg into glass and add to mixture
Crack second egg into glass........ now you know why I add them individually
Mix it up
Add milk and mix and then add more milk until ready to add the water
Mix some more
Add water and then mix
Mix until all the lumps have gone
Mixed to perfection, same consitency as my bath water!
Gotta rest and let the Batter rest as well
Give the batter a light whisk while your pan heats up. Add a drop of vegetable oil or pre melted butter and then ladle in the mixture to the hot pan.
Make sure you move the pan about and tilt so that you get an even covering of mixture. After 30 seconds or so use a palette knife to free the edges especially for the first pancake as it usually sticks.
Shake the pan until the pancake is loose and tip pan forwards until a part of the pancake hangs over the front of the Pan
Delia Smith eat your heart out....... No do not use a fish slice just flick your wrist and hey, hey pancake flips ready to cook the other side.
A perfect landing. No stuck to ceiling or that one was for the dog jokes here!
Slide from pan onto plate.
Repeat process until everyone is full and cannot move
and just to confirm and show the flip.....
