Mathews Squash and Puttanesca Gratin
First find an odd shaped squash, why choose a flat and easy one when you can have a pair shaped one? You need also a sharp knife, cutting board, cheddar cheese and a Jar or two of Jarvis Gourmet Puttanesca sauce!
Stick the knife in somewhere around half way down and then turn the squash. Keep your thumb out of the way!
Nice and clean and ready for the next move
Scoop out the seeds and some of them are hard to remove.
Slice of a small section to just flat the bottom and also cut off the stalk of the top half. Cover with Micro waveable cling film and Nuke for about 10 minutes or until the flsh is soft enough to be scooped out.
Carfeul when you remove the cling film as it holds in the steam. If you do not have a microwave just steam the squash for about 35 to 40 minutes.
Now scoop out the flesh into a bowl
Once scooped out place back into the squash halves and pour in lashings of Puttanesca from Jarvis Gourmet of course. Alternatively you could use Pesto Sauce and then it would be Squash and Pesto Gratin!!

Now grate that cheese, I love cheese so grate a lot and spare the knuckles. This is after all a vegetarian recipe
Place the grated cheese on the top and cover. Well I had to cover as I had to go and play football for two hours and then collect mum before cooking it for dinner later.

Mum was late so we ran around crazy and had fun
Get home shower and change. Heat the Oven to 200C or 400F and place the Squash in the oven on a solid tray.
After about 25 to 30 minutes remove from the oven using a good pair of oven gloves, you know a lot of people burn their hands using towels or bits of cloth!
If you are taking from one room to another place on a carrying tray.
Then serve straight from the squash and MMMMMmmmmm enjoy.
