Funnel Cakes Empty Funnel Cakes

Funnel cakes are quick and easy to prepare and great for impromptu get togethers. Not exactly the healthiest of foods but it is tasty and fun.

You will need a deep fat frying pan
Half fill the pan with vegetable oil

Ingredients:

* 4 cups flour
* 1/3 cup granulated sugar
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* 2-1/2 cups milk
* 3 large eggs
* Icing sugar, for dusting

Directions:

Take a large bowl and whisk together the flour, granulated sugar, baking powder and salt. Make a well in the center and add the milk and eggs; whisk until smooth and allow to stand for about 15 minutes.

you want the consistency of a good quality double cream, slightly thick so it will not just run. So if it is too runny add some more flour.

Meanwhile ....Pour your vegetable oil into your pan and heat to about 350.

Pour the batter into a large funneled jug or tea pot or an icing bag with small nozzle. (Alternatively use a resealable plastic bag , seal the top and then snip off a corner to make a 1/4-inch-wide hole.

Now you are ready to either squeeze or pour your batter into the hot oil. make whatever shapes you wish , concentric increasing circles, spiders webs or just random zig zags. Cook until golden on the bottom which will take about 1 and a half to 2 minutes and then using tongs turn the work of art over and cook until equally golden on the other side which will take about 1 minute more. Transfer the funnel cake to brown paper to drain briefly. Repeat until you have used all the batter.

Dust the funnel cakes with icing sugar and serve hot.
