Cajun Potato Soup with........ Empty Cajun Potato Soup with........

Now this dish is tasty and seriously filling and also wonderful for warming you up if you are knee deep in snow.

You will need.........

2 tablespoons butter
2 tablespoons olive oil
1 medium onion, diced
4 cloves garlic, minced
2 lbs of whatever spicy sausages you like sliced thinly, alternatively diced chicken or Turkey
3 lbs potatoes, peeled and cut into bite-sized pieces
3 cups chicken broth
2 cups milk
1 1/2 cups heavy cream
1 bunch fresh spinach, chopped
1/4 cup grated Parmesan cheese
1/4 - 1/2 tsp ground black pepper
Salt to Taste

To cook

1. Heat the butter and oil together in a large stock pot over medium heat.
2. Cook the onion and garlic in the butter and oil until the onions are softened or about 5 minutes.
3. Add the sausage slices or meat and stir fry for about 5 minutes.
4. Add the potatoes and cook for 15 minutes regularly stirring.
5. Pour in the chicken broth, milk, heavy cream, as well as the salt and pepper.
6. Bring to a simmer and cook for a further 10 to 12 minutes or until the potatoes are nice and tender.
7. Mix in the spinach.
8. Remove from heat.
9. Serve in soup bowls and Top with Parmesan cheese.
