Colcannon a tasty potato recipe
Original Recipe Yield 8 servings
Ingredients
2 1/2 pounds potatoes, peeled and cubed
4 - 6 slices bacon
1/2 small head cabbage, chopped
1 large onion, chopped
1/2 cup milk
salt and pepper to taste
1/4 cup butter, melted
Directions
Place potatoes in a saucepan with enough water to cover. Bring to a boil, and cook for at least 15 to 20 minutes, until tender.
Place bacon in a large, frying pan. Cook over medium high heat until evenly brown and crisp. Remove the bacon and place to one side. Now saute the onions and cabbage in the oil in the pan, if you have a lid for the pan then it helps the vegetables cook faster.
Crumble the bacon
Drain the cooked potatoes, mash with milk and half of the melted butter seasoning with salt and pepper. Sprinkle in the bacon and add the cabbage, and onions and fold them into the mashed potato. then transfer the mixture to a large serving bowl. Pour over the remaining butter to give a lovely colour and sheen.
If you wish to garnish do so with a sprig of parsley or chopped chives and Serve immediately.
