Over in a sleepy corner of Bacolod, the midnight oil was burning and it was slowly running low, but, the latest in a long line of innovative twists on the Filipino cuisine had been conjured up. The ingredients had been gathered and the preparation area cleared, mixing bowls, weighing scales, it would take some time before the result would be known, hmmmm already mouths were beginning to water.
The oven reached the optimum cooking temperature as the ingredients were ready to be moved from the relative cool of the kitchen into the fire! All too soon the aroma was filling the room with a tantalizing recognizable aroma and now the bellies started to rumble in anticipation of what was soon to come. The bellies that were rumbling were those of our two food tasters, Mathew 10 and Daniel 7, both of whom are very discerning young men could detect the scent of something different.
The moment of truth was upon us, the door of the oven was opened and the baking tray slowly removed. “Ensaimadas?” was the disappointed question from Bacolods finest 7 year old food critic, “Daniel these are not ordinary Ensaimadas, I can smell something different” exclaimed an even more discerning Mathew.
3 minutes later a tray of 12 Ensaimadas with a Cocojam and Muscobado filling were consigned to history. Fortunately at Jarvis Gourmet Foods, we keep safety in mind as well as our hands clear of the food, especially as our specially bred and rapacious food testers get right to the job. We knew we were on a winner, not a crumb remained.
