Mexican Wedding Cookies Empty Mexican Wedding Cookies

Ingredients

1 cup soft Butter
3/4 cup confectioners sugar
1 teaspoons vanilla extract
2 cups All Purpose Flour
1/2 teaspoon baking soda
1/8 teaspoon salt
2 cups finely chopped pecans

1 Cup of Confectioners sugar for rolling.

How 2

Preheat oven to 350 degrees F.
Mix the butter and 3/4 cup of powdered sugar and vanilla in bowl until well blended.
Combine flour, baking soda and salt and add to the creamed mixture; mix well and then stir in chopped pecans mixing well.
Pinch of lumps of dough and roll into walnut-size balls. Place the Balls on an ungreased baking sheet about 1-2 inches apart.
Bake for about 15 minutes or until the cookies start to brown slightly.
Remove from oven and cool on the baking sheets until cool enough to handle, but still warm. Now roll them in the remaining cup of powdered sugar (which seems to stick and coat much easier while still warm) place on cooling racks to cool completely.

You can off course add to the decoration with coloured sprinkles or even dipping in melted chocolate.
